Origin

Rogan josh—'red heat' in Persian—traveled to Kashmir via the Mughals. The authentic version uses no tomatoes; its fiery color comes from Kashmiri chili and the traditional 'ratan jot' root.

Chef's Interpretation

We source lamb shoulder with perfect fat marbling, braising it for six hours in a base of slow-cooked onions and our house blend of 16 spices. We import authentic ratan jot to achieve the dish's signature crimson hue naturally.

Flavor Profile

Deeply aromatic with prominent notes of fennel, ginger, and cardamom. The lamb melts on the tongue while the sauce delivers gentle, building warmth.
