From the royal kitchens of Lucknow comes this legendary kebab, where Awadhi cuisine reached its zenith. The seekh kebab was perfected by khansamas (royal chefs) who competed to create the most tender, flavorful preparations.
Chef's Interpretation
We use heritage lamb shoulder, hand-minced rather than ground to preserve texture. The meat is infused with roasted spices and raw papaya for natural tenderization, then formed around iron skewers and cooked in our custom-built tandoor at 900°F.
Flavor Profile
Intensely savory with notes of char, warming spices, and a finish of fresh mint. The exterior is caramelized while the interior remains succulent.
